All great movies listed thus far...I didn't get past the first page! I love the Hollywood style of fighting because it is acrobatic and eye-catching, but I am a true aficionado/fan of real swordsmanship- lets face it, as far as medieval swordfights go, I imagine they were probably over pretty quickly and while visceral, all too brief for movies.
I am not going to link any, but I put forth:
The final swordfight between Balian and Guy - director's cut of KoH Any of the ones in LoTR Troy Gladiator King Arthur - especially his fight against Cerdic; actually, the fight Cerdic had with Tristan was good too, altho I bet Tristan wished he'd held onto some of his knives for that fight. Lance against Cynric was good too. Star Wars - even tho the original trilogy I count as better movies than their contemporary prequels, the fight scenes were much more exciting in the second set of movies.
George and the Dragon had some decent swordfight scenes, if you can get past Patrick Swayze's awful acting skills...it was like he was trying to be a dumbed down version of his Zen bouncer from Roadhouse, and succeeding quite well at it...to the detriment of the film, but he can handle a sword.
Kill Bill. 'nuff said.
I imagine there's gonna be a list of some of the worst swordfights in movies...I put forth the King's Guard. Never heard of it? I'm quite sure the principal actors (Eric Roberts, Ron Perlman) would like it if no one ever has...it was drivel of the worst order, compounded by fight scenes that looked as if they were choreographed by a teenaged novice. Ugh.

Anyone been watching that Starz show, Spartacus: Blood and Sand? I became a Starz subscriber after I saw the first episode on the Encore network. Some folks say its too over the top with the blood and gore; I say bring it! Plus, you get to see Xena warrior princess get it on with a few folks...she's STILL SMOKIN y'all.

Now, I have some mixed feeling about this next movie (wait, that's a lie, I don't have "mixed feelings." I don't like it.) but this fight is pretty well shot and well choreographed.
Not as well as this one, is, though. And this movie is good:

Yea, I liked the Chateau fight scene primarily because he used a broadsword to great effect although I would've thought the choreographer would've made the movements more fluid and less like kung-fu but, still entertaining.
Whoever posted the Princess Bride clips- I've never seen that movie, ever...but I just might have to catch it off the humble one of these days. I found their left handed swordsmanship quite impressive (being a lefty myself) - I figured something was up, what were the chances of two left handed swordsman clashing like that? Then they switched up and I tried not to be too disappointed.
I'll watch any movie if there's a chic swinging a sword in it...at least once.

And I tell you now, without hesitation or hyperbole, that the Princess Bride is my favorite film. It's the first film I have any memory of seeing, and I've watched it at least 3 times a year, every year, since I was 3. WATCH IT. Please. If you do one thing for me, watch "The Princess Bride." Just so you can know what it is like.

watching that Phantom Menace lightsaber duel- I remember thinking how "panzy" Darth Vader seemed after watching that new sith go all out. There's a part in the Seven Samurai where one character is dueling another local with bokken and after he wins, the guy insults him. So he switches to a live blade and kills him. I always liked the seriousness of that samurai's attitude toward his craft. Wasn't a very long fight though...

That's very cool Kilted Cossack, but I think the earlier clip was better filmed. That's the difference between 1999 and 1973! Sidebar: I dont' think the clip had the subtitles, but during the duel, Kmicec finally says to Wolodowski, "Don't embarrass me any further" and right then Wolodowski gives him the cut to the head.

Mifune being Mifune.
I love his fights. I suppose it's all heavily choreographed, but he always seems to have such a dreadful economy, doesn't he? There's never much bluster (except when he's the punk kid in 7 Samurai)---he just moves, both fluid and strong all at once.
I know it's a cliche to dig on Mifune, like he's the Western Japanese star and all, but dang. For me, when I think of a Japanese sword fight, I think of Toshiro Mifune, with a hitch in his shoulder. In Sanjuro, in Yojimbo, in the Hidden Fortress, he's like a tiger among kitty-cats, he's like a wolf among dogs, he's doing the same thing everyone else is doing, it's just that it works for him.

If you dig samurai flicks at all you have to see Sword of Doom. Yeah, it's a cheezy title but it is a brilliant movie with one of the creepiest characters I've ever seen on film. It also has one of the best fight scenes ever. Mifune as an older teacher cuts down a couple dozen guys. The scene is outside at night in a light snowfall--beautiful.
