I know I haven't seen all the types or styles of hamons, but so far my favorites are Sambon Sugi and Choji. Which ones do you guys like?

Cliché, but I'm into big notare. Also the specific ragged almost fire like gunome midare you can get on cable steel.

I really like subtle activity in an hamon. I also like suguha and ko-choji hamon. So if I have to choose just one hamon, it would be suguha based on ko-choji ; ).

Another vote in for suguha, but really anything that looks like some forethought and control were behind it is nice. Not real big on super flashy, wild hamon, but some can look nice. Hitatsura can be done so it is ugly, or it can be done very well. The rest is kind of all the same to me... That said, when I think of hamon, I think of this blade, not because the hamon is particularly good, but because I like the way it matches the hada, which is a thing unto itself: nihontoantiques.com/g23.htm

My fave would have to be Suguha. I know it isn't very showy but it just seems to fit in with the simple functionality of a katana. You mentioned you haven't seen that many, so here are some different styles. Yes there is some overlap but that helps get different views of the same hamon style.

I dunno if I have a static favorite... hamon are sort of like tunes in that some times you need something wild like Hendrix and some times you need something more straight like The Stones... One of my favorites is this one which reminds me of the QRS wave on a heart monitor... makes it look like the sword is a living thing with a pulse, IMO Here's the first example of this togari-gunome style hamon I'm talking about that came up on a Google: www.nihontoantiques.com/fss512.htm
