Gun.
Eh, dodge, parry, capture...there are ways, but it's dangerous, like any fight. Never gone up against it myself, but I can imagine a few scenarios. Of course, you have to be better than the other guy.

Easy. Don't get into a knife fight.

A shield coupled with some kind of longer striking implement would work well. People don't go walking around with shields all the time, but it would work I think.

A well-aimed and fired gun or a well-wielded sword.
Or breaking a vodka bottle behind the guy's head before he draw his stuff

And the karma god smiled upon Sebastien. You sure you're not from Ohio? Nah, you can't be, it would have been a Jim Beam bottle.

I say rush into the fight exposing your chest, and lock his blades between your ribs in order to rip them off the assailant's hands...I kid kid Seriously, if you've managed to get yourself into such an impossible situation and you can't just run away, I'd say try to use the objects that surround you. A chair works wonders for defence, and so can a small table. Try throwing smaller objects at the opponent's face, hard liquor in his eyes. Use your surroundings! It gives you a better chance at not dying.

There are many ways, some of them have been posted here already, including having a better weapon.
However lets say you only have one knife or none.
Typically someone who will pull two knives probably isn't actually an experienced knife fighter. So wait for the off balanced lunge that inexperienced knife fighter will usually do at some point and dodge the lunge, trap their thrusting arm with your side and arm and force it back as you step around behind them, using your second arm you have many choices to disable the second knife or the person, depending how much a threat you really feel the guy/girl is.
Now if they are an experienced knife fighter and you have only one or none knives beating them will be much much harder, but not impossible.
Here I would suggest seriously run away, but if that is not a choice then I would say choose your wound. Yes expect to be injured. This is a tactic most people don't expect. I would suggest you basically choose to let the attacker stick you with one of their blades effectively immobilizing it choose your wound wisely not to be mortal wound. While you again are stepping into them, the key here is get in close and immobilize there second arm with both hands, your knife etc. As mentioned most people will not expect this tactic, you have an element of surprise.
While two knives are intimidating they are not unstoppable. You are likely to get cut if the person knows knife fighting skills. These suggestions are not the only ways. There are many other ways that could be used. Personally I would say you will find that few times will you see someone with knife fighting experience with two knives in a fight, that if you see it then it is a good sign the person doesn't have the skills to go with the knives. The double fisting knives is a way to make them feel more self assured and to intimidate you more. This does not make them less dangerous, but it does mean they are more likely to make mistakes. Like making off balance lunges.

Oh, a bull whip would be cool. Crack it a few times and watch Mr.Showboat scurry off. Just to keep with the theme, a Khukuri or Bowie in your free hand would make you the Showboat king.
The only thing you have to worry about at that point is a catchy line based on the circumstances. For example, your enjoying a picnic, whipping dandelions to pass the time, and dual weild mall ninja jumps out with two saw-backed-with-cut-outs-in-stainless knives. You scare him off with your mad whip skillz, look absently at the horizon, and say heroically "My mother made that potato salad."
On a serious note, you need reach. A log, a chair, or distance between you. If you are bare handed with no escape and nothing to grab, read above. If your trying to pick a knife to beat some one that has two, an example of what he would hypothetically have would be great. As a general rule, I'd say grab a sword. If we're being practical (something that is generally either with me or in the truck) a Himalayan Imports Ang Khola is a serious piece of steel. Avoiding confrontation through intimidation is a good way to actually get out of the situation. Yup, went there.

sword or a jo staff. all you really need is reach and you win.

I wouldn't necessarily put it that simply. Granted, having the longer range weapon in a dual knife fight where you're both inexperienced with said weapons is going to give you an edge (forgive the pun  ). However, if your opponent knows what they're doing with said knives, your range factor isn't going to cement you winning this fight, whatever a win constitutes here. There are reasons that peoples' in ancient times prefered to use a short sword, rather than a longer one. If you have the proper training with a shorter edged weapon, you can be a very dangerous foe.
That said, I'd need to hear what the setting is for this dual knife fight before I could decide how to try and defend against it. It sounds like most people are assuming that it's taking place in a bar, which sounds like a logical place where someone would suddenly decide to pull dual knives out against you (that feels weird to call a logical situation  ). In that situation, I'd be grabbing a bar stool, assuming they're lightweight. If not, I'm looking for a pool cue and making repeated jabs at my opponents face, not even necessarily trying to hit him, but just keep him on guard enough to not be able to counter and get inside my weapon's range. All of this would be done while backing towards a door so I can escape. If all else fails, I'm hoping the bartender doesn't want any blood on his floors and pulls out a shotgun, telling my opponent to leave.

well if my opponent knows what he's doing, then two knives would probably beat a sword depending on what type they were, in which case I'd want two swords to take back the advantage. though a jo staff would still be fine for me as I know my way around one and could break his wrists if he tried to block it.
