I think it must be the photos, cos there really isnt that much heavy-edging going on there. Its really quite thin. Maybe the abrupt change in angle from body to edge makes it look on the thick side...

Do you have a set of calipers Matt? If you do, measure the thickness of the steel 1/4 of an inch up from the edge please.

Got several sets.
Ok, here are some measurements for you;
Total length of blade; 6.5inches Height (edge to spine) at tallest point is 3.5cm Width of blade at the thickest point (which is just after the guard, owing to the way that it is a distally tapered blade); 4mm
Measured from the tallest point of the blade, thickness 1/4" up the blade as measured at the tallest point is .9mm

Yes Sam, thats what I mean, I have found that it is easyer to hollow grind free hand. Sanmarc, do you have any examples of a blade sword/knife that you have done this on? Sounds like an interesting technique to me, especially with an angle grinder instead of a big grinder! Do you just tip it up at an angle and let the wheel dig in?
