It needs some time, at least an hour or two. For most swords, you're just waiting until the core comes down to about 300F to start tempering it. This could take 30 minutes, more or less depending on the piece. Then at least an hour or two tempering in the oven for most carbon steels. Some forges cheat by taking it out of the quench early, but if they don't do it just right, they can ruin the heat treat or temper. That's one thing I hate about forged in fire, they gloss over all the technical details I'd be curious to know. They also take a lot of shortcuts to speed things up. They really aren't the best made swords; it's all just a show, and the cutting tests confirm this. If you want something well made, take the time to do it right I say!
