Oh my God! You didn't find the part of the sharpness test (about 20-30cm) is different from the part of the paper cutting (about 10cm)? How to make the conclusion that the sharpness retention is not good? And if you were to compare them, you'd need the same sharpness and angle of the blade, but obviously they're not the same. Performance testing is a professional task. If not professional testing institutions, there is no ability to do performance evaluation.

Missed this but interesting. Watched both videos and liked.
Maybe I forgot but I didn't realize that S7 was just around 0.5% Carbon. S5 doesn't have much more but way, way less Cr and double the silicon.
Bummer about the fit and cracked tsuka.
