So as some may know I won a 1860 Civil War Cavalry Saber. This sword is suppose to be blunt. What would be the best way to sharpen this sword? And how would I do that.

depends on what kind of edge you want.You may be able to use an accusharp, but the geomatry may not be the best it could possibly be (but an improvement), which would affect the swords cutting abilities, but it would be less likely to crack when it's limits are pushed. If you use a file and a wetstone, you can achieve an awesome edge... If you have done it correctly, and it would cut superbly... But a razor edge would not be a good idea. Bah, it is annoying to type with a PS3.

Could I accusharp it and then Polish it like I would a Katana to remove the knife edge? I do own a accusharp.

this seems to be unlikely. Accusharp leaves an ´V` shaped edge. Solid angle. But a sword should have an edge formed like an appleseed. It would be double the work to remove the V-edge and create an appleseed edge. Just do the appleseed right away, this is not much of a task. A file can actually do it, then use some whetsones and you get a nice geometry that cuts well.
But as one can see accusharp can do something "like" a good edge. So if you don`t bother you can go for that too...

actually for a blunt sword the initial V shape is a great help. Its like cutting the corner off a box, then you cut those two corners and again and end up with a nice rounded shape

I guess I will just wait and see how it is when I get it. Depending how blunt it is I could polish it wish Wet sand paper like I do my Katana and give it a sharp edge.

Depending how thick the edge is, I'd put my money on draw-filing. If it's not too thick a #2 cut Mill file, with some soap stone chalk rubbed on it frequently will sharpen it up nicely, and EVENLY. Finish it off with some 240 grit wet / dry.
Dont use much pressure, just with very light weight on it rub backward and forward holding the file perpendicular to the blade. Keep blowing off the filings so they dont get caught up in it. The chalk will help that. Wear Kevlar Gloves(!!). It will give you great control in shaping the edge and the tip.
An Accusharp will butcher the edge.
if the edge is like 2mm thick, just leave it alone, unless you are prepared to spend 4 hours or so on it.
