There are a lot of folks here that could probably give you more than an earful of good advise on this subject. At least as far as the sword goes. And I would be glad to send a list of engravers. I'm in Texas and can probably put together some suggestions.
However, the following would be most helpful in determining a really appropriate choice. Please bare in mind that we'd all want the choice to be a good one, so can you help us by filling in the following blanks?
What period in medieval history are you going for? Since you mention "knight theme" and "medieval period" is it safe to assume something along the lines of "knights in shining armor, riding a white charger, age of chivalry, etc."?
If so, that would place the selection in the 1200s through early 1400s time period. Does that sound about like what you're looking for?
Also, a budget is probably the best place to go next. How much for the sword? And how much to spend on engraving?
The swords we'd suggest are probably in the $175 to $250 price range, when bought at a discount and at the best vendor.
The engraving could be as much or more than the sword, depending on what you have in mind. Can you tell a little about the type of engraving you have in mind? Modest few swirls with maybe a name and small inscription? A bit more elaborate? Or do you have a special theme you'd like to have done?
Sorry to hit you with a bunch of questions, but I'd like to help in the best way possible.

Hey there. First off karma for you for this get-together in honor of your friend. Now, what are you looking for? In a lower buget price range, you usually have 2 options that tend to exclude one another: durability and aesthetics. Since I'd doubt you'd be actually using them you may want to check out www.reliks.com. I want to help you as much as I can so I'll recommend a sword you can get a lot of information about. You may be interested in the shrewsbury sword. It has a probable date of about 14th to 15th centuries so it should fit in well at most knight themed things. Anyway, both my friend Kriegschwert and myself have posted favorable reviews on this sword and I'd recommend getting it if you want as much bang for your buck as possible. Reliks is located in canada and the shipping delivery wait is about 2 weeks at most (10-14 days I believe was my quote and I'm far more south then you are). Anyway they are a quality company and their director Chris Howard frequents here as well. (username: chrishoward). The shrewsbury should cost you in the upper $80's whith the sbg discount. Now I can't suggest anything about engravings, so lets wait for some other people to post. Good luck with your party!

As far as engraving, I couldn't easily find anyone on the internet that impressed me with engraving knives and/or swords. However, there are many good firearms engravers available and they could likely be persuaded to your cause. Check out www.fega.com and specifically their members page at www.fega.com/membership/MemberPhList.asp for FEGA Certified Professional Engravers.

Since you did not put your price range I just wanted to throw in my 2 cents on the decorative swords available. In my humble opinion the decorative Marto Swords from Toledo Spain are the best decorative swords available. They can be a bit pricey and they continue to get more and more expensive every year. They have a highly polished stainless steel blade, which means they do not rust or tarnish. They do need to be wiped down with a soft cloth if someone decides to touch the blade or finger prints will stay there forever. Some of them are overly gaudy, but there are some very nice designs as well. One of my favorites is the Marto Excalibur. Now keep in mind these are decorative swords with pencil like tangs and very heavy. Though they do look nice hanging on the wall. www.armsofvalour.com/miva/merchant.mv?Screen=CTGY&Store_Code=AOVL&Category_Code=MD
