I'm considering re-treating one of my blades. Its TH in oil, but I want to re-quench it in water. Can this be done? In theory the first quench should be undone if I heat it up to non-magnetic. Or does it just not work that way?

As a general rule, water is a more agressive quench than oil, so will be more likely to cause cracking, warpage etc. That does not mean that it will, just that it is more likely to. If it hardens acceptably in oil, quench it in oil, as it will be safer. Why bother doing it the dangerous way?
The previous hardening will be undone, but unless you want to build stresses in the blade I suggest you normalise at least twice before re-heat treating. Double hardening is only recommended for moderate carbon steels.

The reason is I didn't get a hamon line when I treated it in oil, so I want to retry in water? Apparently I'm using EN8 instead of the EN45 that I thought I was using.
