I'm having a custom Jian forged, and I need some assistance

I practice a Chinese Martial Art (Xinyiliuhequan), and one of the few weapons we train with is the Chicken Sabre (2 of them). The link below will show you a picture of the sword.

I have been unable to find a set, so I'm resorting to having them custom made. A friend of mine in China has agreed to help facilitate the process. He has had several swords made by the best smith in China, and the second best. I've elected to go with the second best, as the price point is literally 10x different. He said I need the measurements for the swords, but I have no clue. I've never had a custom blade made before. So, I have some questions and ideas that I'm hoping I can get answered.
1. I was thinking of a longer Jian. I was thinking of a 31 inch blade. I'm a big guy. 6 foot 6, build like a dragon. So I want a sword that matches my size. I've read that a Jian can be anything from 18 to 31 inches. Should I go longer then this? What are some of your thoughts?
2. Handle length - I was thinking that I would have the handle be large enough for two hands. I read that a Jian can be two handed. I was thinking that I could use it one handed, but have the handle length for two hands. I'm not sure how this is normally done. I measured my hand length, and added an extra inch. That would put me at 11 inches (my hand measured about 5ish inches, ). Would this be a good idea to go with? Or should I keep the handle to one-handed use?
3. Handle Material - I've seen most handles made from wood, though recently I have seen some made from steel. What would be the benefit of having a handle made from steel? Which material do you suggest going with?
4. Handle thickness - I've seen a variety of handles, some quite thin, others quite thick. I have no clue how to go about measuring what would fit me best. All weapons, except for my spear and bow, were off the rack weaponry. Both my spear and bow didn't have many options for customization. The Jian's I've held and used tend to have thinner handles, though I think that is because it's what fits most people. Should I go larger? What size? I'm really unsure as to how to figure out this measurement.
5. Guard - Should I have a hand guard? I know that this can protect the hands. I've seen a few without the guard, and I like the aesthetic of that. I was thinking a dragons mouth in this place. It doesn't function as a guard, it's purely for looks. I can show a picture of this needed. I'm still not sold on that, and I'm very opened to ideas.
6.Scabbard - How does a scabbard for a blade like this even work? Wouldn't it have to be opened on one side? I would assume so, because of the talons coming off of it.
7. Wrapping - What is normally recommended? Cord, or ray? Or is this more preference?
