My sword should arrive in the next couple of days and there are some things I still need to know before it comes.
-I ordered some Hanwei oil with my sword (the kind that comes in a spray bottle). How many 'sprays' should I use on each side of the blade?
-Should I put oil on the crossguard and pommel? If so, how much should I use?

A couple sprays on each side, thoroughly wiped on. You don't want a lot. No dripping or streaks. Basically, the blade will look a little bit darker, and that's it. Too much oil can trap dust on the blade and cause damage, it can also leak into the wood and damage it. The fittings are generally made of a mild steel, and won't rust as readily as the blade, but a little oil couldn't hurt. Just use whats left on the rag from doing the blade.

Some general guidelines for you:
Always clean and oil after any cutting.
Make sure to wipe off old oil before putting on new.
Oil from your skin will cause rust. Always wipe and oil if handled by bare skin.
99% Isopropyl Alcohol is great for cleaning. It cuts through oil and matter left over from cutting very well, and doesn't leave harmful moisture on the blade.
Oils like 3 in 1 oil, Singers Sewing Machine oil, and light mineral oil are acceptable for blade oiling. They also cost less and come in greater quantities than oils marketed as sword oil(which is usually just light mineral oil itself). Some gun oils work as well, but you want to avoid things with detergents in them. Silicon spray is said to work very well.
Try to remember to oil it once or twice a month, even when it hasn't been used. Take it out to check on it once or twice a week.

Well, I just went to pour a little oil on my nihonto to spread around and put in it's saya and accidentally dumped about half a bottle of vegetable oil it, so... Yeah.
