After you have cut through an enemy's spine, they're not going to be doing very much back to you. Cutting to that position is far enough. If you miss (e.g., they get out of the way), you are much better protected against their counter-attack. You are also much better positioned to follow up with a second attack (e.g., a thrust, which can work very well as a follow-up to a cut).
You can also use the same cut to deflect an incoming attack, and either cut the enemy at the same time, or thrust after deflecting their attack (depending on distance).
