Assuming your interested in functionality only and have no historical correctness concern, and unless you are jousting, plastic is the way to go for foot combat. A 55 barrel carwash barrel will barely get scratched by a sharp sword. It it over 1/8 inch thick. It should stop a .22. The benefit is that that you can cover your whole body (except head) at about 20-25 lbs. With steel plate a lot of areas are left open to keep the weight under 45 lbs. The head needs to be steel, because much of the head protection comes from the mass of the helm. Here is a link to my first armor: www.tsafa1.bravehost.com/armor/index.htmI decided to go with leather after fighting in that for 6 months because in some circles of the SCA people expect you to look more period as you get better... but plastic is a great cheap place to start. If I was going to have to face sharp swords in combat, I would rather have plastic then leather for protection. Steel in addition to being heavier will also bake you in the sun. A good way to work plastic is to soften it up in the oven. I did not do that because I did not know at the time, but you can get a good arm and leg fit that way. Another good option I am seriously considering is going with aluminum armor. It looks period, is light and does not heat up too much.
