Other than a stamp/engraving that tells me so, or dropping it in water for a few days (or leaving it out for a month or two) to see if it rusts. Is there a way I can tell if a sword is made of stainless steel or not?

Yes, use a magnet. If it's magnetic it's carbon steel, non-magnetic it's stainless.

bang it against a rock, if it snaps its stainless just kidding, but if its stainless it will be non magnetic

If the steel is not magnetic than you can be sure it is stainless, but there are some magnetic forms for stainless. So there is still a possibility of it being stainless if it is magnetic.
If you really want to be sure get a drop of something acidic and put it on the blade and see if rust forms. Just be sure to put a small drop on a place where it isn't catastrophic if it does rust.
