Only if corrosion resistance is important to you. Otherwise, the "san mai" part is nothing but hype. VG-1 is medium grade stainless steel, comparable to AUS-10 stainless steel. It is harder than SK-5, which is Japanese version of AISI 1080 carbon steel, but is not as tough.
And it is not a hundred dollars more. It is at least $200 more. For the price of the San Mai Natchez, you can get a custom bowie. I bought a custom bowie for less than that.
