Shun Classic 6” Hollow Ground Chef’s Knife

First Impressions
The box as you can see is quite nice on its own. Black canvas texture and the shun cutlery logo embossed on the front in gold. My wife received a little Christmas money from her grandmother and was having some trouble figuring out what she wanted to buy. While walking through the mall today we decided to go into William-Sonoma. While gazing at the wall of knives my wife remarked about wanting to get one of them one day. Well $#it, get one with your Christmas money! After a little debate and a little of me playing the devil on her shoulder she fell to temptation and got it! After a few minutes waiting for the store clerk to fine the one we wanted we were on our way home. Both grinning ear to ear! (My wife did have a little buyer’s remorse, it’s been quite some time since she purchased something for herself but I thought after having a baby she deserves a little treat!)
Historical Overview
The Shun lines were designed with the world’s finest materials to compete with the most expensive knives on today’s market. CEO Koji Endo, head of Japan's largest blade producer, leads the Shun project out of Seki City, Japan. Seki City has a seven hundred year tradition of making some of the world’s finest blades.

The Blade
I asked my wife to describe the blade after she finished cooking. After a few seconds of thought she said, “Beautiful, visually stunning, razor sharp. Typically when chopping veggies they will stick to the blade. Because of the hollow ground dips the carrots I was cutting were literally rolling away. My small hands made the length of the blade adequate for everything I needed to do."
Hilt/Parts & Pieces
The Ebony PakkaWood makes a wonderful handle. It’s only approx ¾ of an inch thick and D shapped. It fits nicely in my rather large hands and in my wife’s small hands.
My wife also said, "I like the dark wood color I think its really pretty, its the handle has more of a modern design IMHO, its very straight but yet it feels very much at home in your hand. It doesn’t feel like your holding a straight piece of wood, the way its been carved. It’s a metter of personal preffernce but I love the wight of the knife, it’s not too light and not too heavy."

Utilizing advanced processes, carefully selected foreign and domestic hardwood veneers are impregnated with phenolic thermosetting resins. Handling & Cutting
She also said, "Glides through potatoes as if they were soft butter. Make quick work of chopping carrots. It has never been so easy to butterfly a chicken breast!"
In Conclusion
My wifes conclusion, "It’s got the beauty of a katana, a sleek modern design, it cuts like a dream and worth every penny. When one holds the blade you can truly feel the dedication to perfection that the Japanese craftsman put into the knife. This being a base model, I can only imagine how the top of the line performs."
