I am wondering if anyone offers other Tsuba (guard) styles and Sayajiri (scabbard tip) that will fit a Kaze Katana?
Lastly there was a cool formula for making a home grown Choji Oil and even duplicating the aroma. Anyone have any wisdom about this.

Just add a couple of drops of Clove oil to mineral oil (say 99% mineral and 1% clove oil), the clove is just to slightly scent the oil, the theroy is that in old japan they used to do this so the cooks could tell the difference between cooking oil and sword oil...
As for the tsuba most stand alone tsuba should fit as they are produced with a smaller hole for the blade so people can file it to get a perfect fit, the only problem is you dont want a tsuba that it too thick compared to the assembly you have now, thinner is ok because you can pad it out with seppa (brass spacers)...
Fred Lohmans shop carry tsuba to suit every taste though they arent cheap (www.katana4u.com), Hanwei make a range of tsuba which most Hanwei dealers should be able to get in for you (http://casiberia.com/productsearch.asp?subsub=yes&cat=Collectibles&subcat=Japanese&subsubcat=tsuba)
Otherwise the classified boards on some of the bigger sword forums are a good place to pick up cheap fittings, and you can pick up some bargains on ebay as long as your aware of the 99c $5000 shipping scam...
