A tiny bit of the leather wrap on one of my swords started to peel up, what would be the best thing to use to glue it back down and prevent further peeling?

Any White wood glue will work, or you can use something like Duco Cement or another craft hobby glue. Don't use glue gun sticks or crazy/super glue or rubber cement. The glue gun sticks won't hole up under stress and are suseptable to normal temperature changes. Crazy/Super glue can premeat your leather very quickly and discolor it and make the whole piece inside-outside hard as a rock when it sets. Rubber cement won't hold up any better than glue sticks.

I dont know if it makes any difference if it is on the grip or not, so something waterproof?

A bit of weatherproof wood glue like Titebond II will work. You can even thin it out a bit with some water if needed.

I use Titebond II as well and all my leather grips and scabbard covers.
