Bren: We get a locally made laksa paste which has shrimp in it, I prefer to make my laksa paste from scratch personally but sometimes I use a pre-bought one to speed things up.
As to eggplant being yeach! It is my favourite vegetable, along with brocolli and mushrooms (eat them raw oh yes!). At the moment my household is living on morrocan food as my bro bought a new cookbook and whenever he does we eat recipes from it for about 2-3 weeks and then he moves onto something else. Love me some morrocan roasted lamb, yum!
Laksa is an asian dish, specifically indonesian if memory serves correctly, very delicious I put prawns and scallops or chicken in mine with garlic, chilli, ginger, a bit of curry powder and cumin and rice noodles. Although I have to say that tom ka gai is just as good, mmm I need to make some tom ka gai. Now I'm getting hungry thinking about all the wonderful things I like to cook.

Nice cutting, Gaffer. The zucchini looked like it was beyond it's prime, anyway. So no need to feel guilty.. As to eggplant being yeach! A turkish/arabian dish that pretty much is the eggplant perfection. Also made some lamb taquine the other day and it was dee-lish. There's something about North African kitchen. Well, pretty much any kitchen with spices. (in the worst Homer Simpson imitation voice) Mmm, spices, chili, yeehaaww! -s.

As to eggplant being yeach! Actually, I do like eggplant so no, I do not think it is "yeach" I meant it more that eggplant cannot be substituted for zucchini in a recipe without ruining that particular recipe. IE, you cannot make sweet zucchini bread with an eggplant. The bitter principles in the eggplant will ruin the mix of ingredients. Fried eggplant is a wonderful dish but my wife's cheeseburger zucchini pie would be ruined if I tried to make that substitution. That was what I meant.

Zucchini bread · 3 tablespoons butter · 3 eggs · 1 1/4 cup vegetable oil · 1 1/2 cups granulated sugar · 1 teaspoon vanilla extract · 2 cups grated zucchini (unpeeled and raw) · 2 cups all-purpose flour · 1 teaspoon baking powder · 2 teaspoons baking soda · 1 teaspoon ground cinnamon · 1 teaspoon ground cloves · 1 teaspoon salt · 1 cup chopped walnuts 1. Preheat oven to 350F. Butter a 9x5 loaf pan. 2. Beat eggs, oil, sugar and vanilla until light and thick. 3. Fold in the grated zucchini. 4. Sift dry ingredients together. Stir into zucchini mixture until just blended. Fold in the nuts. 5. Pour batter into a greased and floured 9 x 5 inch loaf pan. 6. Bake at 350 degrees F for 1 hour 15 min or until toothpick test comes clean.
