Most Japanese swords, both antique and modern, were indeed secured by a single peg. The double-peg design is fairly modern and is really a safe-guard against improperly fitted tsuka. If the core is carved well, a single peg is absolutely enough.
I don't know if I already mentioned it, but shirasaya are not made to be cut with. Besides the lack of samegawa, ito and fuchi/kashira, which all work to reinforce the tsuka, the wood used for shirasaya is fairly soft and porous. It will break much easier than a tsuka made of proper wood.
Also, I used Ronin only as an example of a company that uses good heat-treatment and to illustrate how the steel itself is secondary to the treatment. 1095 is as hard as you want to go, but improperly tempered and heat-treated it is garbage.

That's cool. I still don't know all of even just the basics myself, and am still learning.

so the more i keep reading and researching i'm beginning to see that the best move is going to be to save up and probably go with our fearless leader Mr. southern's custom sbg offering...I really want to say thanks so much to all the forum posters who've been extremely resourceful, polite and helpful (thanks adrian.jordan!). the more i read the more i wrap myself up in thoughts about customizing building and wielding my own customized blade. but i find the more i do this the price point makes those little jumps that eventually make the thought emerge :"If it's gonna be this much i might as well forge my own sword from scratch!!!!!" believe me that thought grows ever more prevalent with every metallurgical article i get my dirty little paws on. I think going with the sbg offering is gonna give me the least painful, to my pocket, at least, and still give me most of what i want in this mystical dream blade that i pine for. lol! again thanks so much everyone and i look forward to moving beyond the beginner's realm and into some of the more advanced common areas with you all soon!
