Knives are tools. Look at what the other workers use, that would be a start. Would be silly to use a machete for strawberries.

For hard, dirty work look for something durable and replaceable (not expensive) that best gets the jobs needed to do done. Kind of like not doing grunt work in expensive clothing attire, instead you wear tough but reasonably priced shirt, coat, pants, whatnot.

Yeah, it's really not that easy. Depends a lot on specific needs.
My favorite pocketknives are the old-fashioned models; manual, two-handed opening, etc, but I find they're not very practical for a work environment. I work retail, and if I forget my box cutter I'll substitute one of my pocketknives, and I've learned it's much easier to use one I can open and close one-handed.
Size is another important consideration. You say you're cutting fruit? What kind of fruit? In what setting? Are you just cutting it off the vine/tree or processing it for packaging? My girlfriend works in the cutting room for the produce department at a grocery store, and there are no knives I can think of that would be good there. If all you're doing is cutting a vine or similar, though, there are knives specifically designed for that purpose...
Come to think of it, where are you, and what are the knife laws where you live?
My current go-to work knife is a Cold Steel Luzon ("medium" size) but that may or may not work for most people.

if you just need something for quick cuts, a liner lock flipper style folder is very convenient. I often carried one like this - bearandsoncutlery.com/product/61109/ (but mine was the model 113 which appears to be out of production)

Cold Steel's Finn Wolf (tough, sharp, easy to sharpen, cheap, works great for me).

Really, if you like knives at all you'll have a collection. If you're eyeballing a few non expensive candidates, just snag them both and then move up to a few more as funds allow and you'll find out what you like in a knife. The key is realizing you WILL end up with a drawer FULL of really cool knives eventually, so don't kick yourself for buying the wrong one...cuz there ain't no wrong one.

I really like my Cold Steel Tuff Lite. Easy to sharpen and smaller blade makes precision cutting easier. Comes in multiple colors and they are relatively inexpensive.
