I'd like to get into some HEMA practice with my sister and brothers, but none of us are particularly fond of getting whacked. I've heard that fencing gear is not up to par for HEMA, so I don't really know what practitioners would use. It all looks the same to me.
We can use thick gloves for the hands, but not sure what to do about head protection and torso/legs . A winter coat will have us passing out from heat before the first swing.

You can use motorcycle riding gear. Any local sport-bike shop will have an inventory of armored jackets and pants- or you can buy it second hand to save money. They are made of kevlar with reinforcing plates. It works very well for HEMA. Make sure to get them to fit properly, not too loose but loose enough where you can get full range of motion.
And pace yourself. Most contact sparring is in matches of about 2 or 3 minutes each, then you should take a short break and cool down while reviewing what happened and what you plan on doing next match.

This is certainly a step forward. There are so many options though. Do you have any links to resources where I can familiarize with the terms being used and what I need for my application?

This is a good quick and cheap option, thanks

What weapons are you sparring with? I'd say that's the biggest factor in which gear to get. I also agree with RufusScorpion that you can get some makeshift sparring gear depending on what you need. I bought two pairs of hockey gloves for my friend and I since most hits tended to land on hands.

I'd say we'd be primarily fighting with rapiers and longswords
