I am a learning bladesmith with a few small projects under my belt. I now want to move on to larger blades, but I don't know what steel to use. I have some 5160 spring, lawn mower blade, and a bunch of scrap, but I don't know how the steel properties will do in a sword. For example, will a spring temper on a rapier make for a floppy blade, or is some spring necessary in order to keep the blade from braking?

5160 steel is a very good sword steel unless you want to make a differentially hardened katana with a nice hamon, it's tough and forgiving, less failures with quenching. Floppy blade has nothing to do with the steel or temper but with the blade geometric, thickness, distal taper etc. Braking also has nothing to do with the steel, it depends on the heat treatment.

Ok, good to know. For a rapier, would I use a concave/hollow grind diamond cross section, or is something else better?

My best advise is get a lot more small projected under your belt first. Also I wouldn't start with a rapier. Even as long as I've been doing this I wouldn't want to make a rapier.

5160 has been my favorite metal for knives, swords and spear heads

1095, 1075, 1084, 5160, 80crv2 are all great choices.
