I suppose this would fall under the category of fantasy swords, but I wonder just how this would work as a real weapon.

Poorly. The blade is gaseous and will not allow you to interact with an opponent's weapon to defend yourself. The torch is very dangerous, but a quick swipe with it will not cut body parts or otherwise incapacitate someone unless you blast them in the face with it. Giving someone a 3rd degree burn while they stab you in the chest is not a good trade. God help you if the fuel lines get cut or ripped open.
You could conceivably use a shield to protect yourself while using this as a dedicated offensive tool, but it is highly impractical compared to even the most lackluster of actual swords... or flamethrowers.
It IS cool looking.

With one of my first ever swings with a real sword when I was a teenager, I managed to crack a dangly crystal on my mother's chandelier in the living room.
Just imagine the mayhem I could have caused with one of those. I want one!
