I have been in a culinary funk lately. Everything I am really good at making is a Fall/Winter dish and typically involves long cooking times. So, to snap myself out of it, I went looking for a sheet pan recipe, that is, an entire dinner cooked on ONE sheet pan. A good friend of mine gave me what she called the ULTIMATE sheet pan recipe: Chicken Sinatra.
The following recipe was given to my friend by one of Frank Sinatra's bodyguards. Frank loved cooking and was spoiled by the women in his life. This recipe was the work of his grandmother, the lady who saved his life when he was born. He came out looking rather grey and showed no signs of life. The midwife declared him stillborn. Frank's grandma took him to the kitchen and doused him with ice cold water and smacked him on the behind until he started crying; she just would not give up. That's the kind of lady we are talking about here.
This is the recipe. It serves four, or two large men.
Four chicken thighs, bone-in and with the skins on (you need the fat for this recipe). Dry them with paper towel. Put them on the sheet pan and season with salt and black pepper on both sides. Drizzle them with good quality olive oil.
Cut three good sized russet potatoes into half inch thick slices. Put them in a big bowl. Cut an onion into similar sized slices and add to the bowl. Season generously with salt, black pepper, and a dried Italian herb (oregano if you can, it's the best dried herb there is). Toss with a good amount of olive oil.
Add the veggies to the sheet pan and scatter around the chicken thighs. Add more seasoning or olive oil if needed. Some people add a splash of white wine vinegar.
Place the sheet pan in a preheated oven at either 350, 375, or 400. The temperature you choose will determine how tender the meat is, i.e. 350 results in the most tender texture, but the cooking time is the longest. Flip over the veggies once during cooking if you like, if only to coat with the chicken fat.
The cooking is done when the potatoes are done! It should be 60-80 minutes. Before serving, scatter some freshly chopped parsley on top.
Eat this with a young red wine like Chianti. EVERYBODY likes this. You cannot go wrong. You can also do endless variations. Add lots of red pepper flakes for a nice kick. Add some chopped red bell pepper. Make it your own.

Try that with pork chops instead of chicken. About halfway through cooking, dump in a can of cream-of-mushroom soup and a little bit of water. The gravy alone that it makes is good enough to just eat with bread. And a beer. -------

I put chopped cabbage in mine too...unless you just don't like cabbage and your house smelling like farts. Farts are often a consequence of a delicious meal. Not all farts are evil in this respect.

Having said that, cabbage doesn't smell like farts to me. Hard boiled eggs and overcooked broccoli smell of farts.
