Glen Cook's "Black Company" series would make an epic show too. Especially if the makers kept the roughness of characters and specific language that makes the thing so realistic.
Also my vote for Zelazny's Amber, at least first 5 books.

I am surprised that nobody has mentioned Robert Jordan's Wheel of Time series. I have always thought that would be pretty awesome if it was done in anime style. As long as they don't screw it up.
I second the horse clans and thieves world. They would make cool anthology type shows.
The death lands series by james axler and Jack Adrian (maybe others). Pretty much any book could be done as a stand alone movie.
Stephen r Donaldson's gap cycle (the gap into conflict) would be pretty cool as a tv series like the expanse. There are so many...... How to choose lol

Nobody's mentioned Saberhagen's First Swords series yet? I haven't read it myself yet, but I've heard great things about it. I honestly don't care for Saberhagen's writing style. His stuff reads like those terrible D&D branded novels (Dragonlance, Forgotten Realms, et cetera).

I'd also love to see Cook's Black Company series on screen, but I think it works better as an HBO style television series. There's a lot of gritty character drama and small scale interactions, which works for TV scale for budgets, but is also interspersed with big fantasy action set pieces. There also haven't been many examples of military fantasy TV series, and that novelty should be appealing.

The Reapers are the Angels - Alden Bell
It's a zombie book that takes place well after the initial outbreak, 25 years afterwards. Civilization is progressively rebounding and zombies are still commonplace everywhere but its more routine in how the characters in the story deal with them. The zombies are more like part of the setting than a legitimate threat. The main character is named Temple and I found her to be very memorable. She is a young teen who lived a troubling childhood. She has no recollection of her parents, lived as a feral child for a while and has rudimentary education, where she's barely literate. But for someone who is illiterate she is very intelligent and mature past her years. And in her travels she carries a khukuri strapped to her thigh so there's plenty of blade play in the story. It isn't long enough for a multiseason series but a mini-series or a movie may do it justice.

Jack Vance's The Dying Earth, and Lyonesse Trilogy.
Also agreed, Book of the New Sun. Latro in the Mist is wonderful historical fiction by the same author.
And agreed again with Glen Cook's Black Company series; however I heard late last year that a screen adaptation was in the works, so there's something to watch for maybe.
