Let's say you're a mercenary like Bronn from Game of Thrones. For some reason you prefer unarmored swordsmanship with no shield. If this is the case, would it be better to use an arming sword or a longsword? Were there any such soldiers or mercenaries in Europe? What kinds of swords would they use?

As far as medieval weapons, I would really say a thrust centric arming sword or an a Messer or falchion with knuckle bow (And nagel for the former), to keep as much hand protection as possible, for one handed sword options.
Other than that - the longsword wins in my book. I'm not a huge fan of them because frankly I think there are a little oversaturated in the hema community and thus get a better rep than they may deserve.

A lot of people used only arming swords, sometimes wielded with two hands, one on the pommel, apparently... Granted, most did wear armour.
But in my opinion, as far as medieval swords with no armour goes, I say a bastard sword. It's a nice in between and just slightly longer than an arming sword.
Tho personally I am more interested in Messers more than anything.

I guess if you have troubles with an archer running away zigzag is easier with an arming sword. (If you lose and run away, you can win another day!)

The problem with an arming sword by itself is hand exposure. When the user had no armor or mail only, arming blades tended to be used in combination with a shield or buckler. When they morphed into side swords with more complex hilts, you start to see them being used solo more often. Likewise, messers with the nagel were often used without shield or buckler.
Longsword would be my choice, since it includes the function of a buckler within it and can hold the line while allowing you to attack.
