You can cut with a soft-tempered sword. You just need to accept that it will need frequent resharpening and will bend if the cuts are bad. The tang construction determines safety in cutting. I saw my brother this afternoon and told him about his sword, will make sure he knows that bending can be fixed and that he can actually cut with it if the fantasy (pun intended) take him.
We discussed about getting him a nicely tempered medieval sword for cutting and he seems interested, all is well.

Targets like 16.9 oz disposable water bottles and paper milk cartons are extremely unlikely to damage it if that's a concern

Right, even an untreated iron blade can still cut, it just gets blunted, scratched, dented and bent much more easily than properly tempered steel would.
That said, bending and straightening will actually work harden the metal at that particular spot, and sooner or later it will snap rather than bend, so caution is still advisable!

I hope you've sorted out the sword gift situation. As for the initial impressions and stats, it's good that the packaging held up well despite the long journey. The blade being a bit bent isn't uncommon, and you did a great job straightening it out. It's a little sharpening, and it should be fantastic.
