I think razor sharp means as sharp as a razor - most swords weren't intended to be that sharp but I have no doubt that many were and are made that sharp for whatever reason.
Cutting paper doesn't actually require THAT sharp of an edge.
I remember the knightly riding sword I reviewed for Gen2 that was sharp enough to shear through a sheet of paper pretty cleanly, yet it wouldn't slice up my arm when I drew the blade across my skin. And that thing was a tank - it cut well and was pretty dang durable. A very nice balance between sharp and strong.

Don't forget, edge geometry matters plenty.
