I'm trying to determine if sikhstuff.com swords are good or not. Someone has any clue?

Never heard anything about them, but I'd guess they're at least Universal/Windlass quality. Maybe a bit less, as most Sikhs probably aren't terribly worried about "functional" stuff anymore, but want to wear something fancy since they have to.
I'm still debating picking up one of their cheaper pesh kabz daggers just because.

I will. Most probably it will take time, though. Every time i have a little sword dough it goes to something else.

being sikh myself, i can actually confirm that. Most usually now have decorative stainless steel, i doubt most would carry the functional. Most are in museums. Even in temples, most on display are stainless steel. They are used for ceremonies mainly. And the one i have at home [cermonial] , stainles steel, the hilt and handle is really uncomfortable.
the market for these swords hasnt taken off yet, I know Cold steel has a shamshir , which looks awesome for its price.

What about those who would say train shastar vidya and gatka? Where is their supply from?

never trained in the art, but my wild guess, would be either local internet sites Like the one you linked. Or i think these classes are taught in community centres , where the teacher actually brings his own supply. My uncle did it for a short while, and i cant remember him buying anything. Unlike kendo , where mostly students need to pay for their own equipment. I think only advance students will actually buy their own equipment, and for real swords... im clueless lol . I doubt they have a nice forge waiting to make the swords for them , like hanwei and co do for JSA. i saw this on ebay tho by accident www.ebay.com/itm/Talwar-sword-in ... 0951119554

Alas, not functional. As the seller says, "Combat Readiness Score: 4 of 10", which means "upgrades to the item are required otherwise expect it to deteriorate" (which is better than 1-2/10, "it may fall apart in its first real combat", but hardly functional). www.medieval-fightclub.com/pages ... Score.html
