Title. Especially for heavier crossbows that had draw weights of 600-900+ lbs. Can it be done by one person or does it require a couple people to hold the bow while it's strung?

Probably by doing something like this There are also a bunch of stingers made for crossbows but probably not for such high #, with rubber rings to grip the limbs and a cord you pull much like a recuve or longbow stringer.

I'd look around and see what companies are selling for your specific crossbow. If its got a huge draw weight then likely someone is making a stringer just for that type of crossbow. I've got a cheapo Chinese #150 crossbow that I was having trouble stringing. I bought a stringer at a local shop, but my crossbow is cheap, so the limb is real short and the stringer wouldn't fit. I ended up getting someone to help me and got it strung.
You can likely get some answers just searching for "How do you string a XXXXXXX crossbow".

Just lift weights and take lots of steroids and protein and in about 10 years you'll be able to just do it with your massive Conanlike muscles lol. :-)

I meant stringing crossbows back in the 13th or 15th century.

They likely hooked a guy on each limb and had a third dude attach it, or hooked up some huge ass horses to it. :-)

I think they used a couple of clamps, fitted just in-board of the normal string nocks..connected together by a longer than normal string. It was then spanned the normal way for that bow. This normally bent the limbs back just enough to fit the normal string. Once this was done, the longer string was relaxed, and clamps removed. Now your crossbow has the normal string in place.
